ADRIANO USINI
Adriano Usini was born in Caravaggio, a small town in the province of Bergamo, Italy. At the age of 12 he started working weekends as a bus boy in a local restaurant, and at 14 he started at culinary school. He finished at the age of 17 and afterwards left Italy to work for Princess Cruises. Adriano then returned to Milan and worked as a chef. After 8 years he decided to move to Grand Cayman and worked for the Restaurant Pappagallo for six years. In 2002 Adriano moved to Ragazzi, where he became head chef and stayed for 12 years.
Finally, Adriano is fulfilling his dream of owning his own restaraunt in Cayman. His passion for food and tradition helps create a unique flavour to all his dishes.

Paolo Cognolato
Paolo Cognolato is also from the Province of Bergamo in Italy. At an early age Paolo decided to enroll in catering school in San Peligrino Terme. Paolo then started to work in 5 star hotels across Italy, such as Imperiale Palace Hotel in Santa Margherita Ligure, Hotel del Golfo, Elba island and Sirenetta Park Hotel in Stromboli. He continued his career in London and then followed a lead on an opportunity to travel to the united states and work in Disney world at the Original Alfredo Restaurant in Epcot Centre, which, brought him to the Cayman Islands in 1998. Paolo started his island carreer at The Brassiere where he stayed for 4 years. He then moved to Pappagallo for 7 years.
Paolo was the manager of Deckers for a number of years before having this amazing opportunity of becoming a restaurant owner. As soon as you meet Paolo you will see his love for Great food, amazing wine, and passion for the service industry.

Primo Castellan
Primo was born in Cittella in the Province of Padova, Italy.
Primo arrived in Cayman in 1991 and worked for Pappagallo Restaurant as a waiter. In 1995 He helped the owners rebuild the entire roof, new patio ceiling and different maintenance of the building which, helped him begin his new passion as a builder.
In 1998 he set out to travel Central and South America for a year. While he was away he learned how to speak and write in Spanish and grasped a new love for travelling.
Primo worked at Italian Garden as a waiter and also renovated a 45 foot Sail boat for 6 months.
In 2001 he started his lengthy career as a server at Ragazzi where he was a supervisor and also was able to work as a builder again with a team creating the Caribbean Club Lobby as well as Luca Restaurant. From this experience of building Primo was able to start his own company as a wine cabinet maker as well as renovations. His cabinets include Casanova, Aqua and Copper Falls as well as many private home renovations. He spends as much time as he can being part of our dynamic team at Le Vele.
